Ingredients
  

Dry Ingredients
  • ¼ cup All-Purpose Flour
  • ½ teaspoon Baking Powder
  • teaspoon Salt about a pinch
Wet Ingredients
  • 1 tablespoon Coconut Oil
  • 1.5 tablespoons Cane Sugar
  • 3 tablespoons Non-Dairy Milk
  • ¼ teaspoon Vanilla Extract
Fresh Fruit
  • 2-3 medium Fresh Strawberries diced

  • Microwave-safe mug (8 oz)
  • Small whisk or fork
  • Microwave

Method
 

  1. Add coconut oil, non-dairy milk, vanilla extract, and sugar to a microwave-safe mug. Whisk together until smooth and unified.
  2. Add all-purpose flour and baking powder to the mug. Gently mix everything into a batter, making sure to scrape down the sides of the mug.
  3. Cut the strawberries into small pieces and add most to the batter. Carefully mix them in, making sure not to overwork the batter. Sprinkle remaining strawberries on top.
  4. Microwave on high for 1 minute 15 seconds. If the mug cake isn't fully cooked, microwave in 10 second intervals until the batter is no longer wet.
  5. Let cool for 30 seconds, then add toppings such as vegan whipped cream or chocolate chips. Serve and enjoy!

Notes

Use room temperature ingredients for best results. Don't overmix the batter to avoid a rubbery texture. Pat strawberries dry before adding to prevent excess moisture. Check baking powder expiration date for proper rise.
