Ingredients

  • ½ cup unsalted butter at room temperature
  • ½ cup chunky peanut butter or creamy
  • ½ cup granulated sugar
  • ½ cup brown sugar light or dark
  • 1 large egg
  • cups all-purpose flour
  • ¼ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Equipment

  • Air fryer
  • large mixing bowl
  • wire cooling rack
  • cookie scoop or spoon
  • fork
  • parchment paper

Method

  1. Preheat the air fryer to 350°F.
  2. In a large bowl, mix the butter, peanut butter, sugar, brown sugar, and egg until well combined.
  3. In a separate bowl, mix together the flour, baking soda, baking powder, and salt.
  4. Add the dry ingredients to the wet ingredients and mix to combine well.
  5. Shape or scoop the dough into 2-inch balls and place them 3 inches apart on a sheet of parchment paper that will fit your air fryer.
  6. Dip a fork in sugar and press in a crisscross pattern on each ball to flatten until each cookie is about 2 inches across.
  7. Air fry for 8 minutes or until golden brown. Immediately transfer the cookies to a wire rack to cool.
  8. Serve warm or at room temperature.

Notes

Room temperature ingredients mix better and create superior texture. Don't overcrowd the air fryer basket - cook 4-6 cookies per batch depending on size. Cookies will continue cooking slightly from residual heat after removal, so don't overbake.
