  • 2 cups old-fashioned oats
  • ½ cup ground or milled flaxseed
  • 3 tablespoons brewer's yeast
  • 1 cup peanut butter or almond butter
  • ½ cup honey
  • 1 teaspoon vanilla extract
  • ½ cup dark chocolate chips

Method
 

  1. In the bowl of an electric mixer fitted with the paddle attachment, add oats, ground flaxseed, and brewer's yeast. Mix these dry ingredients first to ensure even distribution.
  2. Add peanut butter, honey, and vanilla extract to the dry mixture. The combination should smell nutty and sweet.
  3. Mix on low speed until mixture is well combined and holds together when pressed. This process typically takes 2-3 minutes.
  4. Gently stir in chocolate chips by hand to prevent them from breaking during mixing.
  5. Roll mixture into 2-tablespoon sized smooth balls and place on a parchment-lined sheet pan.
  6. Place in the refrigerator for 30 minutes to firm up, or enjoy right away. Once set, transfer to an airtight container.

Notes

Store in refrigerator for up to 2 weeks or freeze for up to 3 months. Room temperature peanut butter mixes easier than cold. If mixture is too dry, add honey one teaspoon at a time. If too sticky, add more oats gradually.
