- In the bowl of an electric mixer fitted with the paddle attachment, add oats, ground flaxseed, and brewer's yeast. Mix these dry ingredients first to ensure even distribution.
- Add peanut butter, honey, and vanilla extract to the dry mixture. The combination should smell nutty and sweet.
- Mix on low speed until mixture is well combined and holds together when pressed. This process typically takes 2-3 minutes.
- Gently stir in chocolate chips by hand to prevent them from breaking during mixing.
- Roll mixture into 2-tablespoon sized smooth balls and place on a parchment-lined sheet pan.
- Place in the refrigerator for 30 minutes to firm up, or enjoy right away. Once set, transfer to an airtight container.
Notes
Store in refrigerator for up to 2 weeks or freeze for up to 3 months. Room temperature peanut butter mixes easier than cold. If mixture is too dry, add honey one teaspoon at a time. If too sticky, add more oats gradually.
