Mug Cake with Almond Meal

Ingredients
  

  • ¼ cup almond flour
  • 1 ⅓ tablespoons unsweetened cocoa powder
  • 2 ⅔ tablespoons sugar
  • ¼ teaspoon baking powder
  • teaspoon kosher salt
  • 1 large egg
  • 1 tablespoon vegetable oil
  • ½ teaspoon vanilla extract
  • 1 tablespoon chocolate chips

Equipment

  • Microwave-safe mug (8-12 oz)
  • Small whisk or fork
  • - Measuring spoons

Method
 

  1. Mix together almond flour, cocoa powder, sugar, baking powder, and salt in your mug.
  2. Stir in egg, vegetable oil, and vanilla extract. Stir well until dry ingredients are very well incorporated—about 20 seconds of stirring is best.
  3. Top with chocolate chips. (No need to stir in.)
  4. Microwave for 60-70 seconds—the cake will rise at the end of the bake time but will fall after heating stops. The top of the mug cake should look very slightly wet when you take it out.
  5. Serve immediately, sprinkled with powdered sugar.

Notes

For best results, use room temperature ingredients. Don't overcook - start with 60 seconds and add time if needed. The cake continues cooking from residual heat. Store leftovers in refrigerator for up to 2 days and reheat for 15 seconds before serving.
