  • 1 cup Granulated Sugar Regular white sugar preferred
  • 1 whole Large Egg Room temperature works best

Method
 

  1. Start by gathering all ingredients and equipment. Let the egg come to room temperature for easier mixing.
  2. In a medium bowl, combine peanut butter, sugar, and egg. Mix using a hand mixer on medium speed until smooth and cohesive, about 2-3 minutes.
  3. Preheat air fryer to 350°F (175°C) for 3 minutes. Spray basket or tray with cooking spray or line with parchment paper.
  4. Roll dough into walnut-sized balls using hands or a small scoop. Place on prepared tray with at least 2 inches spacing between each cookie.
  5. Press each ball gently with the back of a fork in a crisscross pattern to flatten to about 1/4 inch thickness.
  6. Air fry cookies at 350°F for exactly 5 minutes. Do not open the basket during cooking.
  7. Let cookies cool on the tray for 2 minutes, then transfer to a wire rack to cool completely for 10 minutes.

Notes

Try mini chocolate chips, crushed peanuts, or sea salt flakes for variations. To make vegan, replace the egg with 1 tbsp ground flaxseed mixed with 3 tbsp water. Dough balls can be frozen and cooked straight from the freezer by adding 1-2 minutes to cooking time.
